Guys, I am onto a winner with this one. I can take absolutely NO credit for this delicious recipe. I found it on this great blog, modified it slightly and have made it many times since.
Unlike several of the other sweet potato brownie recipes I have tried, this one doesn’t call for any pre-cooking of the potato, which is a relief because – ain’t nobody got time for that. I chuck it all in a bowl, in no particular order, give it a good mix with a wooden spoon and chuck it in the oven. Good to go.
Obviously, doesn’t quite compare to your average dessert brownie, but for a veggie packed alternative, this one is pretty damn delish.
Heat oven to 180 Degrees Celsius
- 1 medium sweet potato grated.
- 2 eggs
- ½ cup melted coconut oil
- ⅓ cup honey (I have also used rice malt syrup – either is great)
- 2 teaspoons vanilla extract
- ½ cup cacao powder
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 tablespoon coconut flour
- A decent handful of dark choc chips.
Cook for 20-25 mins.
Kids love them, we love them, they hardly last a minute in our house.
