I try to keep a stash of homemade clean chocolate in the freezer where possible to attempt to curb the desire for something sweet after dinner, or to use as a trade off to get Story to eat her vegetables.
Now there is absolutely no denying that these ‘clean chocolates’ are no match for real life diary milk. But I do find they fill the void when I am looking for a healthy after dinner treat. And I feel
less no guilt, for eating them all in one sitting.
Essentially the combination of coconut, cacao, coconut oil and rice malt syrup is all you need to makes a yummy clean chocolate, alternative. Sometimes I also like to add things like peanut butter, chia seeds, nuts or cacao nips to change things up.
For these loved up clean chocolate hearts I used the following:
- 1 cup of almond meal
- 1/4 cup rice malt syrup
- 1 cup coconut
- 1/2 cup coconut oil
- 1/4 cup chia seeds
- 2 table spoons of cacao
- vanilla essence
- (cacao nibs and flaked almonds to decorate)
First, mix all of the dry stuff in one bowl.
Secondly, mix all of the wet stuff in another bowl (over heat if the oil needs melting) .
Then fold together.
I set these in love heart shaped ice trays that I found at Target and leave them in the freezer until the cravings hit.
