Bliss Balls.
Quick to make, delicious to eat and virtually guilt free. I haven’t made a batch of these babies in a while. So today I pulled out the food processor threw in all the bits and pushed go. I think I forgot how simple it is.
I whipped up two entirely different batches of bliss balls for your reading, and my eating pleasure.
This first recipe comes from my friend Helen. Helen, an old work pal of Jai’s, delivered a jar of these treats to our front door a day or two after we came home from the hospital with Story. It was the most thoughtful gesture and such a delicious gift. She, and these delicious balls, have had a special place in my heart ever since.
I believe that the original recipe came from The Petite Kitchen but my ad-hoc attitude to baking has led to a bit of recipe evolution.
Ginger Nut Bliss Balls
1 cup almond meal
2 tablespoons of peanut butter
7ish medjool dates (pitted)
3 teaspoons of ginger
1ish teaspoons of cinnamon
1 tablespoon of coconut oil
3/4 cup of coconut
Blitz in a food processor then roll into balls and coat in something pretty or delicious, I chose coconut.
Choc Peppermint Bliss Balls
1 cup of macadamia nuts
12 medjool dates (pitted)
1 tablespoon of coconut oil
3/4 cup of coconut
2 tablespoons of cacao
2 teaspoons of chia seeds
A few drops of peppermint essence
Blitz, roll then coat in cacao nibs
